Red Potato Green Bean Salad

Ingredients

Directions

§ 3 lbs red potatoes

§ Cut potatoes into bite-sized chunks and boil until tender, 10-15 minutes.

§ Steam green beans and red pepper until tender, but not mushy.

§ Toss potatoes, beans, and red peppers with olive juice, lemon juice, basil, parsley, salt and pepper.

§ Can be served warm or cold.

§ 1 lb green beans, cut in half

§ 1 red pepper, thinly sliced

§ 4 T olive oil

§ 4 T lemon juice

§ 2 T fresh basil, chopped (can use dried)

§ 1 T parsley, chopped (fresh or dried)

§ 1 tsp salt, more to taste

§ ½ tsp pepper, more to taste
