| § 3 lbs red potatoes | § Cut potatoes into bite-sized chunks and boil until tender, 10-15 minutes. § Steam green beans and red pepper until tender, but not mushy. § Toss potatoes, beans, and red peppers with olive juice, lemon juice, basil, parsley, salt and pepper. § Can be served warm or cold. | |
