Brown Rice Salad


Brown Rice Salad

Serves: 4-6

Ingredients

Directions

§ 3 C cooked brown rice (approx. 1 C uncooked)

§ Mix all ingredients (except pitas and cheese) in a large bowl.

§ Serve rice salad on pitas or tortillas, with cheese.

Tip: We like to buy the Costco Greek Pitas and melt the cheese on them first.

§ 1 C black beans, rinsed and drained

§ 1 C frozen corn, cooked

§ 1 tomato, diced

§ ½ cucumber, diced

§ 1 avocado, cubed

§ 1 T olive oil

§ ¼ tsp garlic salt

§ ½ tsp salt, more to taste

§ ¼ tsp pepper, more to taste

§ 1 tsp lime juice

§ 2 T chopped cilantro or basil (fresh if possible)

§ 6 pitas or tortillas

§ Shredded cheese
