| § 3 C cooked brown rice (approx. 1 C uncooked) | § Mix all ingredients (except pitas and cheese) in a large bowl. § Serve rice salad on pitas or tortillas, with cheese. Tip: We like to buy the Costco Greek Pitas and melt the cheese on them first. | |

| § 1 tomato, diced | ||
| § ½ cucumber, diced | ||
| § 1 avocado, cubed | ||
| § 1 T olive oil | ||
| § ¼ tsp garlic salt | ||
| § ½ tsp salt, more to taste | ||
